Knife Care
Caring for your new knife.
Keep your blades and handles dry and clean before and after use.
Do not use the Dishwasher, BE the dishwasher. Inside your dishwasher is very chaotic and will limit the lifespan of your custom knife. We recommend using your cutting board in the sink as a rest for the knife edge while you gently wipe with warm soapy water.
It is not recommended to put your knives in the sink. Unsuspecting people reaching into the sink could be hurt by the blade, and the sink area has more hard surfaces that may damage your knife.
Do not soak your knife.
Magnetic wall mounts for kitchen knives, and leather sheaths or kydex for outdoor knives are the preferred method of storage. Universal knife blocks can also be used.
Use plastic, wood, or composite cutting boards. Do not use glass, acrylic, marble or other hardened cutting boards.
High Carbon Steel Knife Care
High carbon steels will develop a patina over time. You can control how aggressively this develops by keeping the following in mind.
All moisture on the knife steel can cause the patina to develop. Any moisture that is left for long periods of time can turn to corrosion or rust. Keep it dry!
Acidic foods will accelerate the development of the patina. Onions, tomatoes, potatoes, and citrus fruits are some examples.
Occasionally apply a light coating of food safe oil such as food grade mineral oil, or Camellia oil. This will keep water and other moisture out of the blade surface.
